I found this amazing recipe HERE and I tried it out for the first time tonight for dinner. I love it. It tastes good and I know it is healthy! It is also 21 Day Fix approved for those of you who are following that nutrition plan like me.
Ingredients
- 1 Potato Baked
- 2 Green Containers Chopped Cauliflower Steamed
- 1 cup low fat milk
- 1/2 cup water
- 1 Red Container Greek Yogurt Nonfat or 1%
- 4 pieces Turkey Bacon Crisped and crumbled
- 1 Green Onion Chopped
- 1/2 - 1 Blue Container Shredded Cheese

Instructions
Prep
- Scrub, stab, and microwave your potato until it gives under gentle pressure.
- Chop and portion cauliflower. Steam in microwave or on the stovetop until very soft.
- Place turkey bacon between paper towels and microwave for 1:45 - 2:00, or until crispy. Set aside to cool. Bacon will continue to crisp and crumble better once completely cool.
Soup
- Add baked potato, steamed cauliflower, greek yogurt, milk, and water to blender. Blend until smooth.
- Pour soup into small saucepan and place over low heat until heated through.
- Season with salt and white pepper.
Finish
- Divide between two serving bowls. Garnish with crumbled turkey bacon, shredded cheese, and green onions.
- Enjoy!
Side Note
- (Or if your husband works nights, you can pack his up in a container on the go! I added the turkey bacon, cheese, and green onions to the whole thing and divided the soup up in two instead of garnishing two separate servings. I also added paprika to ours to add a little more taste).
Recipe notes
21 Day Fix counts per serving: 1 Red, 1 1/2 Yellow, 1 Green, and 1/2 - 1 Blue (depending on how much cheese you use)
