I am so excited to share with you my Piyo results thus far. I plan on incorporating these workouts into my daily workout time because it really does define you, but I think I may be moving on to another program in a few weeks so I can try something new. However, I LOVE Piyo and very pleased with my results.

  • I feel a lot stronger and can do 5-6 tricep push ups without stopping.(Doesn't sound like a lot but if you are weak, it is hard.
  • My legs are so toned and people at work notice.
  • I have lost 7lbs.
  • My belly has gotten a lot smaller and my abs are peeking out more.
  • My balance has improved.
  • My wrists are stronger.
  • I am a lot more flexible! 
  • The pain in my right knee from walking on concrete all day at work feels better.
  • I am in a better mood afterwards.

This was also following the nutrition guide. I had plenty of cheat moments, and tried working out 6 days a week, which I accomplished most weeks, however overall I pushed myself. Tonight was my first attempt at Stuffed Bell Peppers. I think I did great! They are really good and also great for someone who is following the 21 day fix nutrition plan! I made FOUR Bell Peppers so I doubled the recipe.


 STUFFED BELL PEPPERS

I found this particular recipe HERE

What you’ll need:



2 Sweet bell peppers of your color choice.

1 Yellow container of brown rice, or quinoa, cooked just shy of done

1/2 Yellow container of black beans, (canned) rinsed and drained

1/2 Yellow container of frozen corn

2 Red containers of browned low fat ground turkey or beef, seasoned with 21 Day Fix Southwestern Seasoning  (Or left over taco meat)

1 Green container of petite diced tomatoes (no sugar added, read the ingredients.  Should only contain tomatoes and ascorbic acid)

1 Green container of tomato sauce (same as diced tomatoes.  Read the label.)

1 Blue container of your favorite cheese


What you’ll do:


1. Cook brown rice, or quinoa according to directions in your eating plan.

2.  While rice/quinoa is simmering, brown ground meat and season with Southwest seasoning.  Set aside to cool.

3. Drain and rinse black beans.  

4. Portion out diced tomatoes, corn, and tomato sauce, and cheese.

5.  Combine in large bowl meat, tomatoes, corn, rice/quinoa, beans, and sauce.

6.  Cut caps off of peppers and pull out ribs and core.  Rinse excess seeds out.

7. Stuff peppers with filling.

8. Sprinkle with cheese.

9.  Bake at 375 Fahrenheit for 40-45 minutes, depending on the strength of your oven.  Cheese should be melted and filling should be heated all the way through.

ENJOY!

This recipe serves 2 with the following counts per stuffed pepper:  1 Red, 1 Yellow, 2 Green, 1/2 Blue.

I was at a crossroad. Do I want to right now or not? One way will get me closer to my goals and the other further.

That was going through my mind tonight after working 8 hrs on a closing shift. I wanted to spend time with family this morning at the Farmer's Market, which meant sacrificing my workout time before work. I made that choice and I knew it would be hard to want to workout when I got home.

You know what the first thing that popped into my head before I told myself no? I need to inspire my friends and family so they to can get a workout in no matter what day they have. I got off at 9:15pm. That is pretty late. But I did my workout anyway. I have people in my house that may be watching. I may rub off on others like I have with my husband. This isn't about me anymore. It is about everyone. I want to inspire others to Break the Norm.

I found this amazing recipe HERE and I tried it out for the first time tonight for dinner. I love it. It tastes good and I know it is healthy! It is also 21 Day Fix approved for those of you who are following that nutrition plan like me.

HEALTHY POTATO SOUP



40mins

Ingredients


  • 1 Potato Baked
  • 2 Green Containers Chopped Cauliflower Steamed
  • 1 cup low fat milk
  • 1/2 cup water
  • 1 Red Container Greek Yogurt Nonfat or 1%
  • 4 pieces Turkey Bacon Crisped and crumbled
  • 1 Green Onion Chopped
  • 1/2 - 1 Blue Container Shredded Cheese

Servings serving

Instructions

    Prep
    1. Scrub, stab, and microwave your potato until it gives under gentle pressure.
    2. Chop and portion cauliflower. Steam in microwave or on the stovetop until very soft.
    3. Place turkey bacon between paper towels and microwave for 1:45 - 2:00, or until crispy. Set aside to cool. Bacon will continue to crisp and crumble better once completely cool.

    Soup
    1. Add baked potato, steamed cauliflower, greek yogurt, milk, and water to blender. Blend until smooth.
    2. Pour soup into small saucepan and place over low heat until heated through.
    3. Season with salt and white pepper.

    Finish
    1. Divide between two serving bowls. Garnish with crumbled turkey bacon, shredded cheese, and green onions.
    2. Enjoy!

    Side Note
    1. (Or if your husband works nights, you can pack his up in a container on the go! I added the turkey bacon, cheese, and green onions to the whole thing and divided the soup up in two instead of garnishing two separate servings. I also added paprika to ours to add a little more taste).

    21 Day Fix counts per serving:  1 Red1 1/2 Yellow1 Green, and 1/2 - 1 Blue (depending on how much cheese you use)

    Today was a hard day for me personally. Life sometimes throws curve balls that are almost impossible to hit. I had a nervous break down yesterday. It was about how my life wasn't going where I wanted it, a job not working out, and the self pity set it. I watched "The Fault in our Stars" just so I had an excuse to cry. I tend to do that.

    Today, although not completely over it, decided to push myself so I can set my mind on a positive path. I wanted to be ready for work so I can face the day. Here was what my day looks like so far...

    The Only Person You are Cheating is Yourself
    I decided to change it up a bit and PUSH START with 21 Day Fix Workouts Cardio Fix and 10 min Fix for Abs than my usual Piyo. I had Chocolate Shakology with peanut butter for breakfast-post workout.



    My abs are getting there!


    My lunch was a spinach salad with Balsamic Vinegar, Chicken with some mustard, and Concord grapes. This is all 21 Day Fix approved!

    I knew once I finished my workout I would feel better and be in a better mood. You always feel better afterwards. But you still need to prep your mind in order to be positive. It can be a battle in my head sometimes, but I CHOOSE to be happy today.

    If you are not familiar with Team Beachbody, it is a great business to get into. You are your own boss, you are helping others achieve their health and fitness goals as a coach, and you get to decide how much effort you put into it.

    My Back Story
    I was in a rut for a while now. I could never see a future that I wanted and I felt like because my husband and I have not been very successful I did not see any hope. I knew that was no healthy way to think or to dwell on the negative things, however after awhile I gave up the future I saw for myself. What I saw is a house for my family, I am a stay at home mother, I made the food and had a garden full of veggies, and I was making money at home. That was my dream. Was is the word for it because I gave up my hope for the future because of my inner talks like "in this economy you can't be a stay at home mom anymore", or " if you don't have that degree you never got, you will not get enough money to live outside of your in-laws", or my favorite, "your kids will grow up in daycare because you can't afford to only work part time". 

    Yes, I got to the point of hopelessness. I honestly never shared this extreme to anyone because I do not like being negative or bring my husband down any more than he feels. 

    However, when my friend Kat showed her results on Facebook about her journey on the 21 Day Fix program by Beachbody, I was excited to go for it because I felt tired all the time, needed to feel better in my clothes, needed to feel better about myself and wanted to be the best me. I figured, being healthier would make me happy. Turns out it was more than just working out that changed my life.

    When I found out that I could become a coach and how successful people are in this business, I thought I NEED to do this. Something inside me ignited a flame so bright that I could not let it go. I talked with my husband and from that moment on I have been inching my way closer to my dreams!

    Why I joined Team Beachbody
    I joined the Team Beachbody because I saw a future I wanted and that was a stay at home mom. I am happy because I also can pay off debt and pay it forward to others by helping them to beachbody. Because of my Beachbody business I hope to fire my boss so that I can be my own boss helping others full time and eventually buy a house for my future family! Dream Big Baby!

    How Has Team Beachbody Changed my Life
    No matter how far I go with this, Team beach body has given me hope and something focus on. The harder I work, the more I get. The more I give the more I gain. I love the gals I have met and my team is a blessing. One of the focuses with this business is personal development. I have learned so much and improving myself daily. My husband can see a difference and although is not completely on board with this whole thing, he knows this is what I need right now. It is fun, stressful, scary, exciting, and all sorts of things, but I am so blessed that I took the step.

    What I do to get Fit and Strong

    Breakfast

    Try to find clean eating food you like and create a meal you will enjoy. Sometimes you gotta add those things you don't like to really get the results you want. However, there are PLENTY of options out there to have NO excuse why you can't eat well.



    I try to get my workouts done in the mooring because then I feel AMAZING all day and it helps with digestion. I also notice I am not hungry all the time and it helps with my energy level.

    Post Workout Shake
    This shake is amazing! I added banana and peanut butter to my chocolate shakeolgoy. It's so good. This helps with digestion, blood sugar, and is perfect for after a workout to get your muscles strong!



    I find time to spend with my husband on my days off because we he works nights. It can be hard to find time when you have a lot to do and they need sleep. I am glad we got some cuddles and tv in together.

    Lunch:
    My lunch was good! I had just enough and now I will not need to eat for awhile!

    I have never really had much of a problem with my "weight. Up until I started college and gained that dreaded freshmen 15. That summer I dedicated myself to being a bit more active and watching what I eat. I lost those pounds and back to where I was. I thought yay, that was easy.

    But it isn't always easy.

    I started noticing my metabolism and eating habits going down hill about 3 years ago. It really started to hit me about age 22. It was nothing too dramatic, but my pants didn't "feel" comfortable anymore even though I could "fit" in them.

    One of the biggest concerns was that I started to feel tired all the time. I had no energy and would have that "spaced out" feeling almost constantly. I would participate in things and wasn't like I was in bed all day, but something felt off. I also was scared I would become diabetic because it runs in my family.

    I finally decided to really get into health and fitness when my friend Kat posted her transformation from the 21 day Fix on Facebook. She had great results and it was something I could achieve in just 21 days. I was like, why not?! I wanted a change and needed to feel better, so I did it.

    Start date: 145
    End date: 133= lost 8 pounds!
    I lost 1 inch on my arms, 2 1/2 inches on my waist, 1 in on my hips and 2 on my thighs!

    HOW DID I DO THIS?!
    I first started off with a positive mindset and wanted a change. I also knew it would be hard, but did it anyway.
    I followed the program and even though I cheated a couple times, I learned. I used the resources like Pinterest to find recipes and I stay active on my challenge group! Those girls and guys really kept me acceptable and so did my coach. I am so happy I decided to take the first step!

    My Results
    • Energy level went up! I no longer rely on coffee all the time, which really didn't help all that much.
    • My mood has changed so much, I do not get irritated as easily and happier.
    • I fit into clothes I haven't fit into in over a year!
    • I feel better in my clothes.
    • My body feels firmer and is actually getting toned.
    • I no longer have a first trimester tummy! (lol)
    • Again, lost 8 lbs in 21 days!
    • I got a support group and made many friends.
    • I decided to become a coach myself since I LOVE this company.
    • Lastly, I created better habits, still learning, and have been introduced to a whole new world that is changing not only my body, but my mind.
